These cookies first started being made in 9th century Italy. These came in to France in 1533 by Pastry chef "Catherine de Medici" who was the wife of "King Henry II". Later, two sister Marie and Elisabeth started baking and selling the cookies who were Benedictine Nuns. The Italian Jews later adopted the cookies because these had no flour and could be eaten during the eight day observation of pass over.

Ingredients:
- Unsalted Butter - 50g
- Icing Sugar - 25g
- Refined Flour - 60g
- Desiccated coconut - 20g

- Mix the butter and icing sugar together, until it becomes creamy.
- Mix the flour and ¾th desiccated coconut gently and form a dough.
- If the dough is sticky, keep it in the cooler for 5 – 10 minutes.
- Roll it in to small balls and rub it with remaining desiccated coconut and place it in a tray.
- Bake at 160°C for the next 15 – 18 minutes.
- Allow to cool completely and serve.
